80 days — This Italian heirloom first appeared in America in the early 1800s. Can be used as a shell bean. This is the main ingredient of minestrone.

As a dried bean, it has a smooth texture and nutty flavor. It increases 2˝ times when cooked (e.g. one cup dried beans equals 2˝ cups cooked). Each packet contains one ounce, which is approximately 55 seeds.
