Carolina Ruby

80-100 days, vining-type — 'Carolina Ruby' sweet potatoes have red skin with a dark orange flesh. The plant resists fusarium wilt, soil rot, but are susceptible to root knot Nematode. Can be harvested as early as 80 days for "baby bakers" or around 100 days at full maturity. Does well in northern climates.

Bred and introduced in 1999 by the North Carolina State Agricultural Research Station as a stabilized selection from a single 'Beauregard' mutant.[1]

Note: 'Carolina Ruby' should grow fine in most all states with exception of Northern States who must take the extra step of warming the soil two to three weeks before your plants arrive. This is accomplished by hilling your soils into beds or raised rows and covering them with black plastic.

Please carefully read the ordering and shipping policies found on the main sweet potato category page - click here. There is no way of accommodating special requests. The fulfillment of sweet potato plant orders is extremely time consuming and even more so, time sensitive.

Your order will be shipped to you in the date range for your zone as described. Please note that even if the cart shows First Class Postage, plants ship out from the farm in Tennessee on Mondays and Tuesdays using U.S. Priority Mail. With these methods, plants are healthy and strong when they arrive.

As a reminder, sweet potatoes can ONLY be sent to the LOWER 48 STATES and ship using the U.S. Postal Service. In order to minimize delays or lost packages, please provide a valid U.S. Mail address.
