Steuben Yellow Eye

90 days — Also known as 'Molasses Face', the bush-type plants of 'Steuben Yellow Eye' reach about eighteen inches tall, are hardy, and prolific. The beans are a beautiful cream color with a splash of yellow over the eye (hilum).

It was once a very popular field bean in New England and is excellent for soups and baking. Interestingly, a Southern-style comfort food, simply called, "Yellow Eye Peas," is made from these beans. Each packet contains one ounce, which is approximately 50 seeds.
Not prolific, but solid performer.
Easy to shell and grow, but only an average yield for me. Flavor is unremarkable, but has a nice texture when baked. Mildewed pods still produce mostly good beans. One pack of seeds gave me a bit over one sandwich bagful of cooking-quality beans with little waste. No problem getting a harvest in our short season.
