Ruby Queen
55 days — 'Ruby Queen' beets are round with smooth skin and shoulders and have a fine, buttery texture when properly cooked. Their interiors are a uniform dark red with nearly no zoning (rings of color). The tops are dull green with a bit of maroon veining and reach a height of ten to twelve inches.
