95 days — 'Red Burgundy' onions have smooth, glossy skin that is purplish-red in color with flesh that is white with pink shading. In general terms, red onions tend to become more pungent later in the season. When harvested early, for example, they can be sliced fresh and used in sandwiches, to top burgers, and to add color and flavor to salads. Harvested later in the season, they can be cured and do store well if kept in a cool, dry, well-ventilated location. Depending on their pungency, you may still find them suitable for raw uses, but they also roast and grill well.

Red onions are rich in the beneficial carotenoid lycopene, which are effective at scavenging the molecules that have been linked to cancer-causing free radicals. Bright red vegetables are also shown to be useful in increasing blood flow and circulation which is beneficial for heart and lung health.

'Red Burgundy' onions are a short day variety. Each packet contains one gram, which is approximately 200 seeds.

Planting Instructions: Onions have a shallow root system and are adapted for well drained, rich, loam-type soil. Either start seeds indoors, or directly into the garden, in a sunny location, from April to mid-July.

Plant onion seeds ½ inch deep, two to four seeds per inch in rows spaced twelve to sixteen inches apart. Thin the plants to four inches apart to allow the bulbs room to develop. Use thinnings as green onions.
